  • 2 slices Crusty Bread (sourdough or baguette)
  • 1 tbsp Olive Oil for brushing the bread
For the Whipped Ricotta
  • 1 cup Ricotta Cheese full-fat recommended
  • 1 pinch Salt
For the Roasted Strawberries
  • 1 cup Fresh Strawberries halved
  • 1 tbsp Honey or maple syrup for vegan
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Fresh Thyme
  • 1 pinch Salt
  • 1 pinch Black Pepper
To Serve
  • 1 tbsp Additional Honey for drizzling on top

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, toss halved strawberries with honey, balsamic vinegar, and a pinch of salt. Spread on a baking sheet.
  3. Roast the strawberries in the preheated oven for 15-20 minutes.
  4. While strawberries roast, mix ricotta with olive oil and salt until smooth and fluffy.
  5. Toast the bread slices in a skillet or toaster until golden brown and crisp, about 3-5 minutes per side.
  6. Spread whipped ricotta on toasted bread and top with warm roasted strawberries.
  7. Drizzle with additional honey and sprinkle with fresh thyme and black pepper. Serve immediately.
