Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and gather all your ingredients and equipment.
  2. In a large mixing bowl, combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper. Whisk until smooth. Add chicken thighs and marinate for at least 15 minutes.
  3. Boil salted water in a large pot. Peel and cut the russet potatoes, boil for 15-20 minutes until fork-tender, then drain.
  4. Return drained potatoes to the pot over low heat. Add milk, butter, and smoked gouda. Mash until smooth, season with salt and pepper.
  5. Arrange marinated chicken thighs skin-side up in a baking dish. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
  6. Remove chicken from the oven, let rest, and serve with smoked gouda mashed potatoes.
