  • 3 Bay Leaves remove after cooking
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 handful Fresh Thyme dried thyme can be a substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 225°C (440°F). Gather your mixing bowl, cutting board, and knives.
  2. Finely slice the cabbage and drain the sauerkraut thoroughly. Dice the tomatoes, slice the carrot, and chop the onions, garlic, and chili pepper.
  3. In a large mixing bowl, combine cabbage, sauerkraut, tomatoes, carrot, onions, garlic, and chili pepper. Drizzle in vegetable oil and sprinkle salt.
  4. Layer fresh thyme at the bottom of a large baking dish. Sprinkle with dried summer savory, smoked paprika, and bay leaves before adding the vegetable mix.
  5. Place the baking dish in the oven and roast uncovered for 30 minutes.
  6. Reduce oven temperature to 160°C (320°F) and cover with a lid or foil. Roast for an additional 2.5-3 hours, stirring halfway through.
  7. Remove from oven and let rest before serving. Enjoy the caramelized cabbage over polenta, in buns, or with buttery noodles.
