- Preheat your oven to 225°C (440°F). Gather your mixing bowl, cutting board, and knives.
- Finely slice the cabbage and drain the sauerkraut thoroughly. Dice the tomatoes, slice the carrot, and chop the onions, garlic, and chili pepper.
- In a large mixing bowl, combine cabbage, sauerkraut, tomatoes, carrot, onions, garlic, and chili pepper. Drizzle in vegetable oil and sprinkle salt.
- Layer fresh thyme at the bottom of a large baking dish. Sprinkle with dried summer savory, smoked paprika, and bay leaves before adding the vegetable mix.
- Place the baking dish in the oven and roast uncovered for 30 minutes.
- Reduce oven temperature to 160°C (320°F) and cover with a lid or foil. Roast for an additional 2.5-3 hours, stirring halfway through.
