- Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions, around 8-10 minutes until al dente. Reserve 1 cup of pasta water, then drain.
- In a skillet, heat anchovies and their oil over medium heat for 2-3 minutes until they dissolve into a sauce.
- Add minced garlic and chili flakes, cooking for another 2-3 minutes until garlic is fragrant and golden.
- Lower heat, add drained spaghetti and half of reserved pasta water, stirring to combine and cook for 2-3 more minutes.
- Remove from heat, add capers and parsley, mixing well. Adjust consistency with more reserved pasta water if necessary. Serve hot with grated Parmesan and cracked pepper.
