For Cooking
  • 2 cups Low Sodium Chicken Stock
  • 1 cup Red & Green Bell Pepper julienned or diced
  • 1 teaspoon Paprika
  • 1 teaspoon Pimento Seeds (Allspice) whole or crushed
  • 2 tablespoons Dark Brown Sugar
  • 1 tablespoon Ketchup
  • 1 teaspoon Soy Sauce optional

  1. Prepare the Chicken: Remove the skin from the chicken, trim excess fat, rinse thoroughly, and chop into manageable pieces.
  2. Marinate the Chicken: Combine chicken with onions, garlic, escallion, thyme, browning sauce, salt, pepper, paprika, and pimento seeds. Allow to marinate for at least 1 hour.
  3. Brown the Chicken: Heat oil in a Dutch oven and brown chicken pieces for about 5 to 10 minutes per side until golden-brown.
  4. Deglaze & Simmer: Add chicken stock and reserved marinade to the pot, scrape the bottom to deglaze, and simmer for approximately 30 minutes.
