- Preheat your oven to 350°F (175°C). Gather your ingredients and ensure your workspace is clean and organized.
- Rub the boneless pork loin with salt and pepper, and optionally score the surface.
- In a large mixing bowl, whisk together Coca-Cola, brown sugar, soy sauce, Dijon mustard, and minced garlic until sugar dissolves.
- Place the pork loin in a resealable bag or dish, pour marinade over it, seal or cover, and refrigerate for at least 2 hours or overnight.
- Heat a skillet over medium-high heat, sear the pork on all sides for about 2-3 minutes per side until golden-brown.
