Preparation Steps
  1. Preheat your oven to 425°F (220°C) and grate the super firm tofu using a box grater.
  2. In a large mixing bowl, combine the grated tofu with cornstarch, tamari, and smoked paprika, then drizzle in oil and toss until fully coated.
  3. Spread the tofu mixture evenly on a parchment-lined baking tray and bake for 15 minutes. Toss the tofu and return it to the oven for another 10 minutes.
  4. While the tofu bakes, mash ripe avocado with chopped herbs, grated garlic, lime juice, and zest until smooth.
  5. Assemble the sandwich by spreading herbed avocado on an English muffin half, piling on crispy tofu, and adding any desired veggies.
  6. Wrap any sandwiches not eaten immediately in parchment and foil for storage.
