Instructions
  1. Heat the skillet by adding olive oil over medium-high heat until shimmering. Add ground beef and diced onion, cooking for about 5 minutes until browned.
  2. Season with chili powder, cumin, and salt and pepper. Cook for another 3-4 minutes until aromatic.
  3. Incorporate grated garlic for a minute, then set the mixture aside.
  4. Add sweet potatoes, fire-roasted tomatoes, green chiles, and water to the skillet. Cover and simmer for 15-20 minutes until sweet potatoes are fork-tender.
  5. Combine the beef mixture back into the skillet, adjusting seasoning if necessary.
  6. Sprinkle shredded cheddar over the top, cover, and let sit for a few minutes until cheese melts.
  7. Garnish with cilantro and serve hot.
