- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat together softened unsalted butter with both brown and granulated sugars until light and fluffy.
- Add in the egg, vanilla extract, and apple cider to the creamy butter mixture and mix until combined.
- In a separate bowl, whisk together all-purpose flour, baking soda, cinnamon, nutmeg, and salt.
- Slowly add the dry ingredients into the wet mixture while mixing on low speed until just combined.
- Gently fold in the diced tart apples into your dough using a spatula.
- Form the dough into balls and place them a few inches apart on the prepared baking sheet.
- Bake for 10-12 minutes until the edges are golden brown and centers appear just set.
- Allow cookies to cool on the tray for about 5 minutes, then transfer to a wire rack.
- Mix powdered sugar with apple cider in a small bowl until smooth to prepare the glaze.
