Preparation Steps
- In a stand mixer, combine all-purpose flour, sugar, instant yeast, warm milk, melted butter, and salt. Mix on medium speed for 4-5 minutes until smooth.
- Cover the dough and let it rise in a warm area for 30-60 minutes until doubled in size.
- In a large pot, bring water to a boil and carefully add baking soda, stirring to avoid splashes.
- Punch down the risen dough, divide into 12 pieces, and roll each into a 12-inch rope. Cut into 1-2 inch pieces.
- Boil each batch of pretzel bites in the baking soda bath for 30 seconds until slightly puffed.
- Prepare the egg wash by whisking the egg with water. Brush the boiled pretzel bites and sprinkle with sea salt.
- Bake in a preheated oven at 450°F for 12-14 minutes until golden brown. Let cool before serving.
