Method
 

Preparation Steps
  1. In a stand mixer, combine all-purpose flour, sugar, instant yeast, warm milk, melted butter, and salt. Mix on medium speed for 4-5 minutes until smooth.
  2. Cover the dough and let it rise in a warm area for 30-60 minutes until doubled in size.
  3. In a large pot, bring water to a boil and carefully add baking soda, stirring to avoid splashes.
  4. Punch down the risen dough, divide into 12 pieces, and roll each into a 12-inch rope. Cut into 1-2 inch pieces.
  5. Boil each batch of pretzel bites in the baking soda bath for 30 seconds until slightly puffed.
  6. Prepare the egg wash by whisking the egg with water. Brush the boiled pretzel bites and sprinkle with sea salt.
  7. Bake in a preheated oven at 450°F for 12-14 minutes until golden brown. Let cool before serving.
