Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8x11" baking dish with coconut oil.
  2. In a small bowl, whisk together cream cheese, powdered sugar, almond milk, and vanilla extract until smooth.
  3. In a large mixing bowl, combine oats, protein powder, baking powder, cinnamon, salt, and chopped strawberries.
  4. In a separate bowl, whisk together almond milk, yogurt, maple syrup, melted butter, egg, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and mix gently. Spread the mixture evenly in the baking dish.
  6. Dollop the cream cheese mixture and strawberry preserves on top, swirling gently with a knife.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for another 20-25 minutes until set.
  8. Allow to cool for at least 15 minutes, then slice into 6 servings.
