  • 8 ounces Burrata Cheese try cashew cheese for a vegan alternative
Crunch
  • 1/2 cup Walnuts substitute with toasted pecans or almonds
Garnish
  • 1 cup Microgreens/Basil curly parsley or edible flowers can also brighten up the dish

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and slice the sweet potatoes and beets into half-inch rounds, toss with olive oil, salt, and black pepper.
  3. Arrange the slices on the baking sheet in a single layer and roast for 25-30 minutes, turning halfway.
  4. Once cooled, start stacking the sweet potato and beet slices with a spoonful of basil pesto between each layer.
  5. Tear burrata cheese pieces over the stacks and sprinkle with walnuts, garnish with microgreens or basil.
  6. Serve warm or at room temperature, optionally drizzling with balsamic glaze.
