- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and slice the sweet potatoes and beets into half-inch rounds, toss with olive oil, salt, and black pepper.
- Arrange the slices on the baking sheet in a single layer and roast for 25-30 minutes, turning halfway.
- Once cooled, start stacking the sweet potato and beet slices with a spoonful of basil pesto between each layer.
- Tear burrata cheese pieces over the stacks and sprinkle with walnuts, garnish with microgreens or basil.
- Serve warm or at room temperature, optionally drizzling with balsamic glaze.
