Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the pan.
  3. Bake the crust for about 10 minutes and let cool.
  4. Beat cream cheese and sugar in a bowl until smooth.
  5. Add eggs one at a time, then mix in brewed coffee, cocoa powder, and vanilla.
  6. Pour the cheesecake filling over the crust and smooth the top.
  7. Bake for 45-50 minutes until edges are set but center jiggles slightly.
  8. Cool in the pan on a wire rack.
  9. Whip heavy cream with powdered sugar and coffee granules until stiff peaks form.
  10. Spread the whipped topping over the cooled cheesecake.
  11. Cover and refrigerate for at least 4 hours before serving.
